Raspberry Pie Dessert Stacks are a delightful twist on a classic pie, transforming familiar flavors into an elegant layered treat. Flaky, golden-brown puff pastry squares are baked to perfection, offering a crisp, buttery texture. These layers are stacked with a generous spoonful of sweet-tart raspberry fruit filling, bursting with bright berry flavor. A dollop of whipped cream adds creamy richness. Perfect for a stunning dessert that’s both light and indulgent!
Step 1
Preheat oven to 450° F. Cut each pie crust into 6 even triangles. Arrange triangles on a parchment lined baking sheet. Spray with non-stick cooking spray. Combine cinnamon and 2 tablespoons sugar in bowl. Sprinkle mixture over triangles. Bake for 5-8 minutes or until golden. Remove and set aside.
Step 2
In chilled bowl, beat heavy cream on high for 2-3 minutes. Add remaining 3 tablespoons sugar and continue to beat until cream becomes thick.
Step 3
Place 1 large tablespoon of whipped cream on one triangle. Top with a tablespoon of fruit filling and top with a second triangle. Repeat with remaining triangles, filling and whipped cream.
Step 4
Drizzle stack with melted chocolate. Serve with additional whipped cream if desired.
