These adorable pumpkin-shaped blueberry hand pies are a delightful autumnal treat. Imagine a flaky, golden crust shaped like pumpkins, each one hiding a sweet and juicy blueberry filling. Perfect for a Halloween party, Thanksgiving dessert, or just a cozy fall snack, these hand pies are as fun to make as they are to eat.
Step 1
Preheat the oven to 425 degrees. Roll out pill crust and use a pumpkin cookie cutter to cut out shapes. A 4-5" cookie cutter will make about 32 cut-outs, or 16 total hand pies.
Step 2
Line a cookie sheet with parchment paper and place pie crust cut-outs at least 2 inches apart throughout the pan. Place about a tablespoon of blueberry fruit filling in the center of each pumpkin cut-out.
Step 3
Top with another pie dough cut-out, pressing the edges down slightly. Use a fork to crimp the edges together. Brush the tops with heavy cream and sprinkle with sparkling sugar.
Step 4
Bake for 12-15 minutes or until the edges are golden brown. Enjoy!
