Get ready for a delightful treat with these Peaches and Cream Ice Cream Sandwiches! Soft, chewy cookies are filled with a creamy vanilla ice cream and a generous amount of sweet peach fruit filling, creating a perfect balance of flavors and textures.
Step 1
Add the peach pie filling to a food processor or blender; blend until smooth and set aside.
Step 2
Add the vanilla ice cream to a large mixing bowl and let soften.
Step 3
To the ice cream, add the whipped topping and stir until combined.
Step 4
In a loaf pan, layer 1/3 of the ice cream mixture, about 1/3 cup of the pureed peaches, another third of the ice cream, another 1/3 cup of the peaches and lastly the rest of the ice cream. Use a butter knife to swirl the peaches into the ice cream. Cover the loaf pan and freeze overnight.

Preheat oven to 350F and line two baking pans with parchment paper or silicone baking mats.
Step 2
In a large bowl, stir together the cake mix, oil and eggs. Use a small cookie scoop to form 24 cookies.
Step 3
Bake one pan at a time for 8-10 minutes. Remove from the pan and let cool completely.
Step 1
Spread 1 teaspoon of the leftover pureed peach filling on the flat side of half of the cookies. Sandwich a large scoop of ice cream between two cookies (one with the additional peach filling; one without). Wrap with plastic wrap and freeze until ready to serve.
NOTE: You will end up with a little bit of extra pureed peaches. Warm it up and serve it over pancakes, waffles, ice cream or use it as a jam on toast!
