Step 1
Combine crust ingredients in a large bowl. Beat at medium-high speed until mixture is creamy (1 - 2 minutes).Wrap dough in plastic wrap and refrigerate for 1 hour.
Step 2
Preheat oven to 350º F. Form 1-inch balls of dough and place in mini muffin tins. Using your fingers dusted with flour, press dough into bottom and sides of tins. Fill each mini pie with about 1 Tablespoon of cherry fruit filling.
Step 3
Bake uncovered for 18 - 20 minutes, or until lightly browned. Cool completely before serving. Top each mini pie with a pecan half just before serving.
pecan crust…mmm. surprisingly easy to make too. made it for a friend’s birthday and they were gone in seconds.
Made these for Christmas Eve and they tasted very good. However, I had to make the dough balls larger than 1 inch and the recipe made more than 24, as stated. They took longer to bake, an additional 5 minutes. I stored them in a sealed container, but after just 3 days some of the pies had mold on top of them! Recipe should specify to store these in the refrigerator.
Haven’t made these as yet but plan to for our Christmas family gathering. ANYTHING with dairy products in the recipe Needs to be refrigerated
Love this recipe. I have made it several times and sent several batches with my husband to share with people at his work during the Christmas season. I lost the recipe I had cut out of a magazine but was happy to find it on this website. I am making it again this year for a Neighborhood party.
Made these last year to be part of a Christmas brunch. I will increase the pecans by about 2 Tbsp and not chop as finely as I did last year. I also added 1/8 tsp almond extract to the can of cherries. They make a very nice presentation and not too sweet a treat. They were enjoyed by all who tasted!
made these at a cookie party last night 12-21-19 and they are so dang good. had fun baking them with a few friends. I highly recommend this recipe .
