Easter Hand Pies

Celebrate Easter with these delightful Blueberry Easter Hand Pies, golden, flaky pastry pockets filled with delicious blueberry fruit filling. A drizzle of sweet vanilla glaze and a sprinkle of colorful pastel sprinkles make them as beautiful as they are delicious. Perfect for Easter brunch or as a sweet treat in an Easter basket, these hand pies are bursting with blueberry goodness in every bite!

Ingredients

  • 1 package ready-made pie crusts
  • 3/4 cup Lucky Leaf Blueberry Fruit Filling
  • 1 egg
  • 1 cup powdered sugar
  • 1 1/2 Tbsp. milk
  • Dash of vanilla extract
  • Pastel food coloring
  • Spring or Easter themed sprinkles

Directions

  1. Step 1
    Preheat oven to 350°F. Line a sheet pan with parchment paper. Cut out a 3” by 4” rectangle from parchment paper then use it to trace 8 rectangles from the pie crusts.

  2. Step 2
    Place 4 pie crust rectangles on the sheet pan. Add 1 heaping tablespoon Lucky Leaf Blueberry Fruit Filling to the middle of each pie crust.

  3. Step 3
    Mix the egg with 1 tablespoon water to make an egg wash. Brush the egg wash along the edges of each pie crust rectangle. Place a second pie crust rectangle on top and use a fork seal all around the edge. Brush the top of each hand pie with the egg wash. Bake for 25 minutes, or until browned.

  4. Step 4
    Allow to cool completely then combine the powdered sugar, milk and vanilla in a bowl. Whisk until smooth and divide into 2-3 bowls. Add a drop of food coloring to each bowl then mix. Spread on top of your hand pies and add sprinkles. Allow icing to harden for 10 minutes then enjoy.
