Immerse yourself in a symphony of flavors with our Cherry Cheesecake Brownie Bits, an irresistible fusion of rich chocolate, velvety cheesecake, and vibrant cherry goodness. This delightful dessert combines the best of brownies and cheesecake into bite-sized morsels, making it the perfect treat for any sweet occasion.
Step 1
Preheat oven to 350°F. Prepare brownie mix according to the package directions. Prepare a mini muffin pan with mini liners or spray with nonstick spray, if metal. If it’s silicone you won’t need to spray it. Add 1/2 tablespoon of brownie batter to each mini muffin cup. Bake 16-20 minutes. Set aside to cool.
Step 2
Meanwhile prepare the cheesecake filling. In a bowl using an electric mixer whip the cream cheese until smooth. Add the sugar, sour cream, lemon juice, vanilla extract and mix on medium until fluffy, about 3 minutes.
Step 3
In a separate bowl whip the heavy cream on medium high until peaks form, about 3 minutes. Gently mix together the heavy cream and cream cheese mixture.
Step 4
Spoon or pipe the cream cheese mixture on top of the cooled brownies. Refrigerate at least 6 hours, or over night. Remove the brownie cheesecake bites to a serving dish. Before serving spoon a small amount of Lucky Leaf cherry pie on top of each cheesecake and serve immediately.
