Delight in a playful twist on two classics with these Apple Pie Cupcakes baked right into crisp, sweet ice cream cones! Moist spiced cupcake batter is swirled with apple fruit filling, creating layers of warm, cinnamon-kissed flavor. Once baked, these cone-shaped treats are topped with a luscious swirl of creamy frosting and more delicious apple fruit filling for that irresistible apple pie taste. Finish with a drizzle of caramel for a dessert that’s as whimsical as it is delicious. Perfect for parties, bake sales, or family fun!
Step 1
Preheat the oven to 350°F. Place ice cream cones in a 12-cavity cupcake pan with liners. Set aside.
Step 2
In a large mixing bowl, prepare the cake mix according to package instructions. Add ½ tsp. nutmeg and cinnamon. Beat until well combined. Stir in 1 cup of the chopped apple fruit filling (I used scissors to cut the apple slices into smaller pieces).
Step 3
Fill the cones about ⅔ full and bake for 20-22 minutes or until a toothpick inserted in center comes out clean. Remove cupcakes from the oven
and let cool.
Step 1
In a large mixing bowl, beat the butter with an electric mixer on medium for about 3 minutes. Add the powdered sugar, cinnamon, vanilla and cream. Mix until completely combined. Then beat on medium for 3 minutes.
Step 2
Scoop frosting into pastry bag fitted with a 1M tip. Pipe buttercream in a circular pattern onto each cupcake (leaving an opening in
the middle) and place a dollop of apple fruit filling in the opening. Drizzle with caramel sauce and sprinkle with a pinch of cinnamon. Serve and Enjoy!
