Indulge in the delightful fusion of classic apple pie flavors and the comforting warmth of coffee cake with this scrumptious Apple Pie Coffee Cake. This heavenly treat combines layers of tender, cinnamon-infused cake with a generous helping of apple pie filling, creating a symphony of flavors and textures that will make your taste buds dance.
Step 1
Preheat oven to 350 degrees F and spray a 9x13 baking dish with non-stick cooking spray.
In the bowl of an electric mixer, or in a large mixing bowl, add cake mix, eggs, sour cream, milk, apple pie spice, and vanilla bean paste.
Step 2
Mix on medium speed for 2 minutes either in your stand mixer or using a hand held mixer. Add the batter to the prepared pan.
Top the batter with the apple fruit filling. Making sure to evenly distribute the fruit filling over the top of the batter.
Step 3
Add to the preheated oven and bake for about 40 minutes or until the cake is fully cooked and set.
Top with optional glaze
Optional glaze for recipe is 1 cup powdered sugar to 2 tablespoons heavy cream. Additional spices or flavorings can be added for additional flavor.

Very good. But how did you keep uour apples & filling from sinking to the bottom & going completely out of sight?
The best way to avoid sinking fruit is to toss the fruit in a couple of tablespoons of the cake mix separately to coat it lightly before adding them to the other ingredients.
This was delicious – only thing the amount of apple pie spice was not given. I looked up another similar recipe and used 1 tsp cinnamon, 1/4 tsp nut meg, 1/4 tsp ginger. I just guessed! Came out yummy!
