Pumpkin Spiced Waffles

Ingredients

  • 1 3/4 cups flour, spooned and leveled
  • 2 tsp. sugar
  • 1 1/2 tsp. baking powder
  • 1 tsp. baking soda
  • 1 1/2 tsp. pumpkin pie spice
  • 1/4 tsp. salt
  • 1 1/4 cup whole milk
  • 1 cup Lucky Leaf 100% Pure Pumpkin
  • 2 eggs, room temperature
  • 4 Tbsp. unsalted butter, melted and cooled slightly
  • Optional: Syrup, powdered sugar & pecans for topping

Directions

  1. Step 1
    Preheat waffle iron and spray with nonstick spray. In a medium bowl combine flour, sugar, baking powder, baking soda, pumpkin pie spice and salt.

  2. Step 2
    In a second bowl combine milk, Lucky Leaf 100% Pure Pumpkin, eggs and butter. Add the wet ingredients into the dry then mix until just combined. It’s ok if the batter is lumpy.

  3. Step 3
    Add about ½ cup batter into the center of each well of the hot waffle iron. Cook for about 5 minutes or until the waffles are crisp and cooked through. Serve immediately topped with syrup, powdered sugar and pecans.
